The winners of the Caterer Middle East Awards 2020 were revealed in a glittering ceremony held at the JW Marriott Marquis on December 8.
In total, 16 awards were handed out as well as number of highly commended prizes for those who came oh so close.
The winner of this year’s Restaurant Team of the Year – Hotel Managed Outlet award is Shimmers
In both back of the house and front of the house, the focus at Shimmers is on building and developing a strong team capable of serving a large number of covers, generating outstanding revenue and maintaining profitability through controlling of food and beverage costs. Overall revenue has increased more than fiver percent YOY, while costs are managed under established goals through the right sale mixes, by changing menus, and bringing new products to the list such as ouzo and skinos, which are new to Dubai and unique to Shimmers.
By increasing the numbers at last year’s New Year’s Eve dinner, Shimmers managed to increase revenue by 31% over the year before, and it has continued to prosper by building a second kitchen for larger events.
To deliver different experiences to Shimmers’ guests the back of house team consistently works on seasonal promotions and new dishes, looking for special exports and authentic Greek products such as different kinds of cheeses, wild catches for fish dishes, etc. in order to deliver memorable experience and retain the interest of the guests building the pool of loyal customers who visits the venue minimum once a week.

Bombay Brasserie, Taj Dubai
The Bombay Brasserie brigade under the commendable leadership of chef Ajay Negi has been consistently striving to deliver food par excellence which can be observed from positive guest feedback on social media and online review platforms such as TripAdvisor, Instagram, Zomato and Google. In addition to this, the kitchen has reduced food wastage to a minimum by utilising raw materials of the highest standard with high yield reducing overall food cost by two percent.
The restaurant team is highly innovative and pro-active when it comes to providing guests with a memorable experience by celebrating special occasions at the restaurant with music, handwritten greeting cards and a home-made cake.
