Fine dining Arabic cuisine is missed opportunity
Five-star Arabic cuisine would make Dubai stand out in the world
Arabic cuisine is still mainly rustic and traditional, according to executive chef of the Ibn Battuta Gate hotel, Anston Fivaz, and could benefit from the "European touch".
"Fine dining Arabic cuisine is a concept that is stil unexplored in this region," said Fivaz. "A chef from J W Marriott wrote a book called Modern Arabic some years ago which was all about traditional Arabic food done in a fine dining, very modern way. But the concept has never picked up in Dubai."
Fivaz said that filling this thus-far unexploited gap in the market could benefit Dubai: "Modern Arabic cuisine prepared for in a five-star environment, with that European touch so it doesn't make it so rustic, would really make Dubai stand out as different. The flavours are there and the ingredients are all available, it’s just a matter of taking that product and turning it into a different market."
