This is a very interesting meeting and discussion which should follow with another one to go deeper in the situation. Crisis is not over yet and international independent restaurants are leving europe but you can not compare US/Europe to UAE or use it as an idea. You, hoteliers, have to squeese your brain to find something new, peolple travel around the world and understand F&B or you have to change your hotel names in FAWLTY TOWERS.

I do agree that F&B in hotels differ from the stand alone, the main issue is not that hotel F&B is not able to run there outlets. The issue is that hotel GM are not allowing them to run as a stand alone. Meaning outlet PR dedicated not having to wait 60 days to launch a promo; manning level, beverage manager and so on... this cost will turn into profit once you properly invest...
