What makes Cavalli Club special in comparison to its competitors in the market?

Hayan Abou Assali: Cavalli Club is all about the experience fine dining, pre-party venue, concepts, outstanding service, a well-trained and empowered team, positive energy, glamour, luxury, celebrities, live shows and entertainment.

Francesco Stara: Cavalli is special because it offers a service that no other club in Dubai does. One of the beauties of it is that we provide the guest with a fine dining culinary experience and after, the place transforms into a night club.

How do the front-of-house and back-of-house teams support each other?

HAA: It is all about communication; informing and updating each other by radios and phones, and following up with a special touch from each individual member of staff. Responsibility, initiative and efficiency in each communication is the key to our success.

FS: Communication is essential. From a kitchen standpoint, I can say that the service team is always there to support the kitchen by promoting our menu, educating the guests and encouraging them to try new products, and make all our back-of-house work shine.

How do you ensure the outlet is busy and profitable?

HAA: Cavalli Club is successful because we focus on creating different concepts every day, targeting a different crowd for each night, delivering outstanding service and a big line-up every week. Additionally, our culinary team makes the dining experience unforgettable.

FS: My job as a chef is to make sure we use the best products, and most importantly, create a great working environment to guarantee a great end result. Cavalli gives you a lot of positive energy and we always make sure that every person we meet knows about the restaurant and we invite them to come and try it.

What are the biggest business challenges you face?

HAA: The biggest challenge is keeping up the reputation and the standard that we have set for everyone to follow. We don’t compete or copy others; however others compete with us — we are the trendsetter in the market.

FS: To make people understand real Italian/regional cuisine. It’s our job to educate guests and make sure they try authentic things. Our new menu offers a mixture of dishes to really tantalise the taste-buds — it really is a work of art.

What does the future hold for Cavalli Club?

HAA: Cavalli Club Dubai is going bigger than ever in 2016, with more concepts, fine-dining experiences, big DJs, celebrities, singers and corporate events, along with consistent outstanding service from a great team.

FS: For sure it is to expand the ‘made in Italy’ brand regarding Italian cuisine. And to focus on making sure Cavalli Club remains one of the best night club brands in the world.
